The recipes section of Today has a nice recipe from Jean-Geroges Vongerichten using chipotle peppers. His glaze is almost more of a chipotle pepper caramel.
You take sugar and water and heat it until it turns golden over high heat. Then add garlic and cook until it browns as well. Next add in chipotle peppers and ancho peppers as well as the three main citrus juices (orange, lemon, and lime). Reduce it to a glaze and then brush onto the pork chops.
