Freeze the Chipotle Peppers in Adobo Sauce

There are several ways to freeze the chipotle peppers in adobo sauce. I recommend pouring them into a large zip lock bag and then freezing them flat. This will allow you easily to break off pieces as you need them.

You can also puree the chipotle peppers in the adobo sauce before freezing them in the zip lock. If you puree them, you can make teaspoon sized mounds on a plate and then freeze the plate. You can then take the frozen chipotle puree mounds and put them into a single zip lock.

If you want to preserve the chipotle peppers for a long period of time canning them might be the best option. Because of the high vinegar content of the adobo sauce it is completely safe if done properly. The basic process is to fill up a canning jar with the chipotle peppers in adobo sauce and seal it, then boil it in a pot of water for about 30 minutes. You should be able to store the chipotle peppers in the pantry for a year or more.
